Ingredients

12 ounces plain flour
6 6 ounces margarine or 6 ounces margarine , and butter combined
1 pinch salt
cold water , to mix
6 ounces unsalted butter , softened
6 ounces caster sugar or 6 ounces superfine sugar
3 large eggs , lightly beaten
2 ounces self raising flour
6 ounces ground almonds
3 -4 drops almond essence
3 tablespoons raspberry jam
3 tablespoons cranberry sauce or 3 tablespoons jam
12 ounces fresh cranberries
2 ounces sliced almonds
icing sugar , for dusting
16 ounces ready-made shortcrust pastry , instead of home-made pastry ( optional )

Instructions

1.Preheat oven to 375°F (190°C).
2.Sift flour and salt together into a bowl.
3.With your fingers, rub in margarine and butter until the mixture resembles breadcrumbs.
4.Mix in enough water to form a soft dough.
5.Roll out the pastry on a floured surface and use it to line an 8 inch (20cm) flan tin.
6.Chill for 30 minutes.

8.Gradually beat in the eggs, adding a little flour if the mixture starts to curdle.
9.Fold in the remaining flour and the ground almonds, then mix in the almond essence.
10.Spread the base of the pastry case with raspberry jam and the sides with cranberry sauce.
11.Pile in the almond mixture and press flat.
12.Scatter over the cranberries and sliced almonds.
13.Bake in the preheated oven for 45 minutes, or until set and golden.
14.Leave to cool in the tin for about 10 minutes, then remove and serve.
15.Dust with icing sugar before serving.
