5 ounces soft butter or 5 ounces soft margarine
3 ounces caster sugar
2 teaspoons vanilla essence or 1 teaspoon vanilla extract
5 ounces self raising flour
desiccated coconut or oats
glace cherries

Instructions

1.Preheat the oven to 180°C (350°F) or gas mark 4.
2.Cream together the butter or margarine and sugar until light and fluffy.
3.Add the vanilla essence or extract and mix.
4.Fold in the self raising flour to form a soft dough.
5.Roll the mixture into small balls and dip them into the desiccated coconut or oats.
6.Place them on a baking tray, slightly flattening each ball to about 1cm in thickness.
7.Halve some glace cherries and press one half gently into the center of each biscuit.
8.Bake for about 15-20 minutes until light golden in color. Remove and allow to cool on a wire rack.
