5 carrots , sliced
2 cups chicken broth
2 cups water
4 cups tomato sauce
1/2 cup red wine ( optional )
1 cup canned kidney beans , drained
1 can green beans
2 cups baby spinach , rinsed
3 zucchinis , quartered and sliced
1 tablespoon chopped fresh oregano
2 tablespoons chopped fresh basil
salt and pepper to taste
1/2 cup seashell pasta
2 tablespoons grated Parmesan cheese for topping
1 tablespoon olive oil

Instructions

3.Add celery and cook for 5 minutes until softened.
4.Add carrots, chicken broth, water, tomato sauce, and red wine (optional).
5.Bring to a boil and simmer for 30 minutes.
6.Add kidney beans, green beans, baby spinach, zucchinis, oregano, basil, salt, and pepper.
7.Cook for 10-15 minutes until the vegetables are tender.
8.Add seashell pasta and cook for another 10 minutes until al dente.
9.Serve hot, topped with grated Parmesan cheese and a drizzle of olive oil.
