Ingredients

1 lb fillet venison
1 teaspoon fresh thyme , and chopped
2 tablespoons olive oil
4 shallots , peeled and finely sliced
1 garlic clove , finely sliced
1 tablespoon red currant jelly
2/3 cup red wine , decent one please
8 ounces fresh blueberries
1 tablespoon butter

Instructions

1.Preheat the oven to 180C/350F/Gas 4.
2.Season the venison with salt and black pepper.
3.Fry the venison with oil in a oven-safe pan over high heat to get a good sear on all sides.
4.Place the venison in the oven for around 7 minutes or until it reaches the desired doneness.
5.Set the venison aside to rest.
6.Reduce the heat of the pan and add shallots and garlic. Stir and cook until the shallots are translucent.
7.Add red currant jelly, red wine, and blueberries. Cook and stir until the blueberries burst and the sauce has thickened.
8.Add butter to the sauce and stir until melted.
9.Carve the venison and serve with the blueberry sauce on top.
