Ingredients

1/2 lb self rising flour
1/2 teaspoon salt
1 teaspoon mustard powder
1 pinch cayenne pepper
2 ounces unsalted butter
2 ounces Stilton cheese , grated or 2 ounces other blue cheese
5 fluid ounces milk , plus extra for brushing

Instructions

1.Preheat oven to 220°C.
2.Mix flour, salt, mustard powder and cayenne in a bowl.
3.Rub in the butter until the mixture looks like breadcrumbs.
4.Add the cheese and mix well.
5.Add enough milk to bring mixture together making a sticky dough.
6.Pat out gently until 2 cm thick.
7.Cut out rounds from dough using a glass.
8.Place each round on greased baking sheet and brush tops with milk.
9.Bake for 12 to 15 minutes.
10.Allow to cool on a wire rack and serve warm.
