Ingredients

500 g ready-made shortcrust pastry
200 g butter
200 g caster sugar
2 eggs , beaten
2 egg yolks
4 teaspoons kirsch ( optional )
200 g ground almonds
4 tablespoons plain flour
85 good quality raspberry jam
110 g fresh raspberries
icing sugar

Instructions

1.Preheat the oven to 200°C/180°C fan/gas mark 6.
2.Roll out the pastry to fit a 22cm tart tin. Leave the excess pastry hanging over the edges.
3.In a large bowl, beat together the butter and caster sugar until creamy.
4.Gradually add in the beaten eggs, egg yolks, and kirsch (if using), beating well between each addition.
5.Fold in the ground almonds and plain flour until completely incorporated.
6.Spread the raspberry jam evenly over the bottom of the pastry case.
7.Pour the frangipane mixture over the jam, spreading it out to the edges.
8.Scatter the fresh raspberries on top of the frangipane.
9.Fold the excess pastry over the edges to form a rustic crust.
10.Bake the tart for 35-40 minutes, until the pastry is golden and the frangipane is set.
11.Allow the tart to cool in the tin for 10 minutes before removing.
12.Dust with icing sugar before serving.
