Instructions

1.Preheat your oven to 140°C or 275°F.
2.In a saucepan, add together margarine, sugar, currants, raisins, sultanas, spices, baking soda, ginger, and water. Bring to a boil and simmer for about 15 minutes, then allow to cool.
3.In a mixing bowl, sift the flour, then add the cooled mixture from the saucepan. Mix thoroughly.
4.Beat the eggs and add them to the bowl, mixing them in well.
5.Grease a 1 lb cake tin and line the bottom of it with baking parchment. Pour the mixture into the tin.
6.Place in the preheated oven for approximately 1½ hours.
7.Allow to cool for about 5 minutes, then remove from the cake tin. Cool further on a wire rack before serving.
