Instructions

1.Preheat the oven to 160°C/325°F/Gas mark 3.
2.Mix 2 ounces flour with salt and pepper on a plate and use it to coat the chicken portions.

4.Remove the chicken and set aside, then add the chopped bacon to the casserole dish and cook for a few minutes.
5.Add the chopped leeks, carrots, celery, onion, garlic, and thyme to the casserole dish and cook for 5 minutes.
6.Add 4 ounces of flour and sugar to the casserole dish and mix well.
7.Gradually pour in the ale, followed by the malt vinegar, Dijon mustard, and chicken broth, while stirring.
8.Add the bay leaf, turnips, parsnips, and sage to the casserole dish, then return the chicken portions to the dish.
9.Cover the casserole dish and cook for 45 minutes.
10.For the dumplings, mix the suet, flour, Stilton cheese, walnuts, salt, nutmeg, and pepper in a bowl.
11.Add enough cold water to make a dough, then use your hands to shape the mixture into small balls.
12.Place the dumplings on top of the casserole dish, cover, and cook for another 30 minutes.
