Instructions

1.Preheat the oven to 200°C/fan180°C/gas 6.
2.Boil the potatoes in a pan, drain and leave to cool.
3.Add the sausages to the pan and fry in 1 tablespoon oil until golden brown.
4.Cook the bacon slices in a shallow non-stick pan until crispy, remove and keep warm.
5.Add the remaining oil and butter to the pan, add the potatoes and fry for 5 minutes until golden, add mushrooms and cook until tender.
6.Crack the eggs into the pan, cook until they firm up then place the pan in the oven for 10 minutes until the eggs softly set.
7.Serve with the tomato wedges and crispy bacon.
8.Season with salt and freshly ground black pepper to taste.
