Ingredients

4 sweet potatoes , peeled and roughly chopped
2 teaspoons olive oil
1 garlic clove , peeled and crushed
2 celery ribs , trimmed and finely sliced
1 onion , peeled and finely sliced
350 g butternut squash , peeled , deseeded and chopped into bite-sized pieces
450 ml roasted vegetable stock
410 g can kidney beans , drained and rinsed
410 g can black-eyed peas , drained and rinsed
2 red peppers , deseeded and sliced
2 courgettes , trimmed and sliced
4 tomatoes , sliced in half
1 dessertspoonful arrowroot
2 tablespoons chopped fresh parsley

Instructions

1.Preheat the oven to 220°C/gas 7.
2.Boil the sweet potatoes in a pot filled with salted water for about 15-20 minutes until soft.
3.Mash the boiled sweet potatoes, adding salt and pepper to taste.
4.In a large pan, add the olive oil, garlic, onion, and celery, and sauté for a few minutes until they soften.
5.Add the butternut squash, sliced courgettes, and red peppers and stir well.
6.Pour in the vegetable stock, and add the black-eyed peas and kidney beans along with the sliced tomatoes and parsley.
7.Mix the arrowroot with 2 tbsp of water until it forms a paste. Add this paste to the pan and stir for another minute.
8.Pour the vegetable mixture into an oven-proof dish and spread the mashed sweet potato mixture on top.
9.Place the dish in the oven and bake for about 25-30 minutes, or until the top turns golden brown.
10.Once it is cooked, remove the dish from the oven, let it cool for a few minutes, and serve hot. Enjoy your Shepardess Pie!
