Ingredients

4 tablespoons rosemary mayonnaise ( see directions below )
8 slices country style bread
5 ounces good quality blue cheese ( Rogue River Smokey recommended- or other good smoked cheese )
1/4 head romaine lettuce
2 large beefsteak tomatoes , cut into 8 slices
3 tablespoons olive oil ( you could leave this out to lighten it up )
1 teaspoon finely chopped rosemary
1/2 teaspoon grated garlic
3/4 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon lemon juice

Instructions

1.Make the rosemary mayonnaise: Combine mayonnaise, rosemary, garlic, lemon juice, salt, pepper in a small mixing bowl and mix well.
2.Heat up a nonstick pan and a griddle or grill on medium-high.
3.Brush bread with the olive oil and place on grill or griddle. Cook until toasted and then repeat on the other side, totaling 2-3 minutes.
4.Remove from grill top with 1 tbsp of rosemary mayo.
5.Place the blue cheese, lettuce and tomato on top, and top sandwich with the second piece of bread.
6.Serve immediately.
