Ingredients

1 orange rind
1 lemon rind
1 carrot , grated
4 ounces glace cherries
12 ounces mixed dried fruit
50 ml Grand Marnier
150 ml brandy
175 g vegetable suet
1/4 lb self raising flour
5 ounces muscovado sugar
1 teaspoon mixed spice ( mixed )
175 g white breadcrumbs
2 eggs , beaten
A light pudding is what the Heap family owes their existence to. Every year, since the family was formed, they have made sure to guide and pass down the tradition, recipe, and knowledge of making this light Christmas pudding down the generations to the next. The tang of orange and lemon zest and the sweetness of Glace cherries will put you in the holiday mood in no time. This recipe is for all those who feel overwhelmed with the flavors of the more traditional Christmas puddings.

Instructions

1.In a large bowl, mix together the orange rind, lemon rind, grated carrot, glacé cherries, mixed dried fruit, Grand Marnier, and brandy.
2.Add in the vegetable suet, self-raising flour, muscovado sugar, mixed spice, and white breadcrumbs. Mix well.
3.Add the beaten eggs and mix until everything is thoroughly combined.
4.Spoon the mixture into a 1.2 liter pudding bowl, cover with greaseproof paper and then foil, and tie around the rim of the bowl with string.
5.Place the pudding bowl in a large saucepan and pour boiling water around the sides until the water comes halfway up the sides of the bowl. Cover the pan with a lid and boil for 5 hours, checking regularly to top up the water level as needed.
6.To serve, remove from the bowl and drizzle with additional brandy, then light it with a match. Serve with piping hot custard.
