1/2 oranges , juice of or 1/2 lemon , juice of
1 tablespoon golden syrup
3 drops almond essence
2 eggs
1 bottle Guinness stout ( to moisten )

Instructions

1.In a large bowl, add 5 ounces breadcrumbs, 3 ounces flour, salt, 1/2 teaspoon mixed spice, and 1/2 teaspoon mace and mix well.
2.Add 3 ounces shredded suet, 1/4 lb brown sugar, 1/4 lb currants, 3 ounces raisins or 3 ounces dates, and 1 ounce chopped almonds to the bowl and mix well.
3.In a separate bowl, mix together the juice of 1/2 orange or 1/2 lemon, 1 tablespoon golden syrup, 3 drops almond essence, and 2 eggs.
4.Pour the liquid mixture into the bowl with the dry ingredients and stir well, adding enough Guinness stout to moisten the mixture.
5.Grease 6 to 8 individual pudding molds and fill each halfway with the mixture.
6.Cover the molds with parchment paper and aluminum foil, then steam for 3 hours.
7.Remove the molds from the steamer and let cool. Store in a cool, dry place until ready to serve.
8.On serving day, steam the puddings again for 2 hours. Remove from the steamer, remove the paper and foil, and invert onto a serving platter. Serve hot with brandy butter or cream.
