Ingredients

2 cups strong earl grey tea , warmed
180 g raisins
170 g soft butter
170 g brown sugar
3 eggs , beaten
285 g plain flour
2 teaspoons baking powder

Instructions

1.Preheat the oven to 180°C. Line a 20cm cake tin with baking paper.
2.Brew a strong cup of Earl Grey tea and soak the raisins in it. Let it sit for 10 minutes.
3.In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Gradually add the beaten eggs, whisking until well combined.
4.Sift the flour and baking powder together. Gently fold the flour mixture into the butter and egg mixture.
5.Fold the soaked raisins into the batter.
6.Pour the batter into the prepared cake tin.
7.Bake for 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
8.Let the cake cool in the tin for 5 minutes before turning out onto a wire rack to cool completely.
