Mulligatawny soup is a fusion recipe that originated in India and became popular in the UK during the British colonial era. The name 'Mulligatawny' roughly translates to 'pepper water' in Tamil, referring to the soup's spicy flavor. It is traditionally made with chicken, but this vegetarian version swaps chicken for a medley of veggies for added nutrition and flavor. It is a creamy and satisfying soup that is perfect for an easy weeknight meal or a cozy dinner party.

Instructions

1.In a large saucepan, melt the butter over medium heat and add the curry powder and tomato paste. Stir until fragrant.
2.Add the onion, leek, carrot, celery (if using) and potato and cook for 5 minutes, stirring occasionally, until the vegetables are slightly softened.
3.Pour in the vegetable broth and bring the mixture to a boil, then reduce the heat to medium-low and simmer uncovered for 25 minutes or until the vegetables are tender. Stir occasionally.
4.Using an immersion blender, blend the soup until smooth. If using a regular blender, blend in batches and be careful not to blend when hot.
5.Season with salt and serve hot.
