Ingredients

1 packet Knorr Shepherds Pie Mealmaker Mix ( I use the Coleman 's Brand , but when submitting this recipe , it would n't accept `` Coleman 's Shepherds )
2 cups frozen peas and carrots
2 cups mashed broccoli and cauliflower ( see my recipe for this , or make your own , this will add a mega dose of Vitamins A , C & E )
1 veggie crumbles ( I use `` Lightlife '' which has 0 grams of fat and 14 grams of protein )
Shepherd's Pie is a classic British dish traditionally made with meat such as beef or lamb. This recipe, however, is vegan-friendly and includes healthful vegetables such as carrots, broccoli and cauliflower. Instructions

1.Preheat the oven to 400°F.
2.In a large pan, cook the veggie crumbles until lightly browned.
3.Mix in the Shepherds Pie Mealmaker Mix and 2 cups of water, simmer for 10 minutes and then let cool for 10 minutes.
4.In a separate bowl, mix the mashed broccoli and cauliflower together.
5.Add frozen peas and carrots to the veggie crumbles mixture and stir.
6.Spread mashed veggies on the bottom of a casserole dish, then add the veggie mixture on top.
7.Bake for 20-25 minutes.
8.Let cool for 5 minutes and enjoy!
