Ingredients

1 large butternut squash , peeled and cubed
1 onion , chopped
2 garlic cloves , chopped
1 -2 tablespoon fresh ginger , chopped
2 carrots , peeled and cubed
1 mango ( optional )
2 tablespoons oil
4 cups vegetable stock
1 can coconut milk
2 teaspoons curry powder
2 stalks lemongrass , cut into large chunks
1 chili pepper , chopped

Thai Butternut Squash Soup is a twist on the classic butternut squash soup but with a Thai-inspired flavor profile. Instructions

1.In a large pot, heat oil over medium heat. Add onion and garlic and sauté for 2-3 minutes.
2.Add carrot, ginger, chili, curry powder and stir.
3.Add vegetable stock, lemongrass, butternut squash and bring to a boil.
4.Reduce heat to low, cover and let simmer for 20-25 minutes until the butternut squash is tender.
5.Remove from heat and let cool for a few minutes.
6.Remove lemongrass and puree the soup using an immersion blender or transfer to a blender and blend until smooth.
7.Return soup to pot, add coconut milk, salt, sugar, and stir until fully mixed.
8.Heat soup over medium heat for 5-10 minutes until heated through.
9.Ladle soup into bowls and serve.
