Ingredients

6 ounces gluten-free flour , mix
1/2 teaspoon xanthan gum
1 tablespoon dried sage , finely chopped
seasoning
3 ounces gluten free vegetable suet or 3 ounces lard
cold water
1 tablespoon vegetable oil
4 gluten free sausages , skinned
3 slices back bacon
1 medium onion , chopped
3 tablespoons applesauce
Wicklewood's Ploughman’s Roly Poly (Gluten Free) is a twist on the traditional British dish, the ploughman’s lunch. The dish consists of a filling of crumbled sausages, bacon, and onions, wrapped in a pastry and baked until golden brown. Instructions

1.Preheat the oven to 220°C (200°C fan)/425°F/gas mark 7.
2.Mix the flour, xanthan gum, dried sage and seasoning together in a large bowl.
3.Add the vegetable suet or lard and rub in until the mixture resembles breadcrumbs.
4.Add enough cold water to make a dough.
5.Roll the dough out on a floured surface to approximately 10 x 8 inches.
6.Heat the oil in a frying pan, add the sausages and cook until browned, remove and cut into pieces.
7.Cut the bacon into small pieces and fry in the same pan until browned, then remove.
8.In the same pan, fry the onion until translucent, then remove from the heat.
9.Spread the applesauce over the rolled-out dough, leaving a border around the edges.
10.Sprinkle the onion on top, then the bacon and the sausage pieces.
11.Roll the pastry up tightly, tucking the edges in as you go, then place in a roasting tin.
12.Bake in the preheated oven for approximately 35-40 minutes.
