Ingredients

1 cup milk
2 tablespoons yeast
1/2 cup sugar
2 teaspoons salt
1/3 cup butter , melted and cooled
1 teaspoon cinnamon
1/2 teaspoon nutmeg
4 eggs
5 cups flour
1 1/3 cups currants or 1 1/3 cups raisins
1 egg white
1 1/3 cups confectioners ' sugar
1 1/2 teaspoons finely chopped lemon zest
1/2 teaspoon lemon extract
1 -2 tablespoon milk

Instructions

1.Warm up the milk and add the yeast. Mix until combined and set aside for 5 minutes to activate.
2.In a large mixing bowl, add in the flour, sugar, salt, cinnamon and nutmeg. Mix well.
3.In a separate mixing bowl, beat the eggs and add the melted butter. Mix until combined.
4.Add the yeast mixture and egg mixture into the large mixing bowl. Mix well to form dough. Add in the currants and knead until the fruits are well distributed into the dough.
5.Set the dough aside to rise for an hour.
6.Preheat the oven to 180°C. Roll the dough into balls and place them on baking sheets. Let them rise for another 30-45 minutes. Egg wash the buns.
7.Bake for 20-25 minutes until golden brown.
8.For the icing, combine the confectioners' sugar, lemon zest, lemon extract and milk into a piping bag. Pipe cross-shaped icing on top of the buns.
