250 ml milk
150 ml double cream
2 free range egg yolks
50 g caster sugar ( I like to use vanilla sugar )

Instructions

1.In a saucepan, heat the milk and cream over medium heat until just bubbling.
2.In a separate bowl, whisk together the egg yolks and sugar until well combined.
3.Slowly pour the heated mixture into the egg mixture, whisking constantly.
4.Return the entire mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon.
5.Strain the custard through a fine mesh sieve and serve hot or cold as desired.
