1 lb self-raising flour
6 ounces unsalted butter
1/2 lb caster or 1/2 lb granulated sugar
1 large egg
1 teaspoon baking soda
1 teaspoon salt
4 teaspoons ground ginger
8 fluid ounces golden syrup or 8 fluid ounces light corn syrup ( or , for variation , use molasses or maple syrup )

Instructions

1.Preheat the oven to 350°F (180°C).
2.In a large mixing bowl, sift flour and add salt and ginger.
3.Heat syrup, sugar and butter in a saucepan until melted.
4.Add beaten egg and soda and stir into the flour mixture.
5.Mix to form a stiff dough.
6.Roll into walnut-sized balls and place on a lined baking tray.
7.Bake for approximately 15 minutes, or until golden brown.
8.Once cooked, allow to cool on a wire rack. Enjoy!
