Ingredients

1/2 cup unsalted butter
1/2 cup icing sugar
1 egg
1 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon cream of tartar
1/2 cup seedless raspberry jam
1/2 cup icing sugar

2 teaspoons water , as needed

Instructions

1.Preheat the oven to 350°F and line a baking sheet with parchment paper.
2.In a large bowl, cream together the butter and icing sugar until light and fluffy.

4.Roll the dough out to about ¼ inch thickness on a lightly floured surface. Cut out circles using a biscuit cutter.

6.Once the biscuits are cooled, spread raspberry jam on half the biscuits and top with the remaining biscuits.
7.For the glaze, mix together the icing sugar, almond extract (if desired) and enough water to make a smooth glaze. Drizzle over the top of the biscuits before serving.
