Ingredients

2 cups self-raising flour
1 teaspoon salt
1/2 cup brown sugar
1/2 cup white sugar
2 tablespoons golden syrup
2 teaspoons mixed spice
1 1/2 cups mixed fruit
1/2 teaspoon baking soda
1 cup chopped vegetable suet ( eg Kremelta )
milk , to mix

Instructions

1.Grease a pudding basin and line the bottom with baking paper
2.Sift flour and salt into a large bowl
3.Add brown sugar and white sugar to the bowl and mix well
4.Dissolve baking soda in a little bit of milk
5.In a separate bowl, mix golden syrup and mixed spice
6.Add mixed fruit to the spice mixture and stir well
7.Add the spice and fruit mixture to the flour bowl
8.Add the dissolved baking soda and vegetable suet to the bowl and mix everything together
9.Add milk to make a soft, moist consistency
10.Transfer the mixture to the prepared pudding basin and cover with a double layer of baking paper and foil
11.Place the pudding in a large pot and fill with boiling water until the water comes halfway up the sides of the pudding basin
12.Cover the pot with a lid and steam the pudding for 3-4 hours
13.Remove the pudding from the pot and let it cool slightly before serving with custard
