Ingredients

1 lb ground pork , lean
1 lb ground lamb , ground veal or ground turkey , lean
12 ounces shredded suet
8 ounces fresh breadcrumbs
1/2 lemon , zest only
1 teaspoon grated nutmeg
1 tablespoon fresh mixed herbs , , chopped
1 teaspoon fresh sage , chopped
1 egg , beaten
plain flour ( for coating )
Oxford sausage is a traditional British sausage that dates back to the 18th century. Made with a mixture of ground pork and lamb or veal, the sausage is flavored with lemon zest, nutmeg and a variety of herbs. The use of suet in this recipe gives the sausage a rich, meaty flavor and a hearty texture. Oxford sausage makes for a satisfying and filling meal that can be enjoyed with a variety of sides such as mashed potatoes, vegetables or baked beans.

Instructions

1.In a large mixing bowl, combine the ground pork, ground lamb/veal/turkey, suet, breadcrumbs, lemon zest, nutmeg, herbs and sage
2.Add in the beaten egg and mix well until thoroughly combined
3.Divide the mixture into 8-10 portions and shape each portion into a sausage shape
4.Coat each sausage in plain flour
5.Preheat the oven to 375°F/190°C. Heat a frying pan over medium heat and add a little oil. Fry each sausage until browned on all sides
6.Transfer the sausages to a baking dish and place in the oven for 25-30 minutes until cooked through
7.Serve hot with your choice of sides
