1 cup unsalted butter , softened | |
1/2 cup icing sugar | |
2 teaspoons vanilla | |
1 3/4 cups all-purpose flour | |
1/2 cup cornstarch | |
3/4 teaspoon baking powder | |
1/4 teaspoon salt | |
1 cup skor toffee pieces |
1. | Preheat oven to 350°F. |
2. | In a large bowl, beat the butter until creamy. |
3. | Add in the icing sugar and vanilla. Beat until light and fluffy. |
4. | In a separate bowl, whisk together flour, cornstarch, baking powder and salt. |
5. | Gradually add the flour mixture to the butter mixture, beating on low speed until the dough comes together. |
6. | Stir in the Skor toffee pieces. |
7. | Scoop tablespoonfuls of the dough onto a parchment-lined baking sheet. |
8. | Bake for 12-15 minutes or until edges are lightly browned. |
9. | Allow to cool for a few minutes on baking sheet before transferring to a wire rack to cool completely. |
