100 g unsalted butter , softened
50 g caster sugar
100 g plain flour
50 g rice flour
1 grated lemon , zest of
10 drops lavender , cooking essence
1 pinch dried lavender flowers or 1 pinch fresh lavender flowers
sugar , to sprinkle before baking
Lavender shortbread is a classic dessert with a twist - the addition of lavender adds a unique and fragrant element to the buttery cookie base. Instructions

1.Preheat the oven to 180°C.
2.In a large mixing bowl, cream together the butter and caster sugar until light and fluffy.
3.Add in the plain flour, rice flour, lemon zest, and lavender essence. Mix until a soft dough is formed.
4.Roll the dough out on a floured surface to about 1cm thickness.
5.Cut the dough into rounds or desired shapes. Place the shortbread on a baking tray lined with parchment paper.
6.Sprinkle the dried or fresh lavender flowers and sugar over the top of the shortbread.
7.Bake in the preheated oven for 15-20 minutes, or until the edges are slightly golden.
8.Remove from the oven and allow the shortbread to cool completely before serving with fresh summer berries.
