15 fluid ounces sparkling rose wine
2 ounces caster sugar
2 sachets unflavored gelatin
1 tablespoon fresh lime juice
12 ounces small strawberries
8 ounces raspberries
12 12 ounces red currants or 12 ounces blueberries

Instructions

1.In a bowl, mix sparkling rose wine with caster sugar and unflavored gelatin.
2.Stir in fresh lime juice.
3.Rinse and slice strawberries.
4.In a terrine mold, pour a little of the wine mixture.
5.Add strawberries, raspberries, and red currants or blueberries.
6.Pour in more of the wine mixture and repeat layers of fruit and jelly until the mold is full.
7.Refrigerate for at least 4 hours or until set.
8.To serve, run a knife around the outside of the mold and turn it out onto a serving plate.
