4 ounces softened butter
2 ounces caster sugar , plus extra for sifting
5 ounces plain flour
2 ounces rice flour

Instructions

1.Preheat the oven to 325°F (160°C)
2.Cream butter and sugar together until light and fluffy
3.Add sifted flour and rice flour, and mix until the dough comes together
4.Roll out the dough to about 1cm thick and press into a rectangular pan
5.Take a fork and prick the dough all over
6.Bake for 30-35 minutes or until golden
7.Sprinkle with caster sugar and cut into squares while still warm
