1 lb granny smith apple
1/4 cup granulated sugar
4 tablespoons water
1/4 teaspoon ground cinnamon
1/2 lemon , zest of , finely grated
1 lb puff pastry
3 tablespoons marmalade
1/4 cup milk ( for brushing )

Instructions

1.Preheat the oven to 400°F/200°C.
2.Peel, core and slice the apples.
3.In a saucepan, combine the sliced apples, sugar, water, ground cinnamon, and lemon zest. Cook over medium heat until the apples are tender and the liquid has reduced.
4.Roll out the puff pastry and cut into 8 circles. Place them on a lined baking sheet. Spread marmalade on each circle and add the cooked apple mixture on top.
5.Brush the edges of the pastry with milk.
6.Bake for 25 minutes or until golden brown. Serve warm with vanilla ice cream.
