Instructions

1.Peel the apples and slice them finely, about 1/8 inch thick.
2.Combine the apples, sugar, water, cinnamon, and lemon zest in a saucepan over medium heat. Cook until the apples are tender and the liquid has evaporated, about 15-20 minutes, stirring frequently.
3.Preheat the oven to 375°F (190°C). Roll out the puff pastry on a floured surface to about 1/4-inch thickness. Cut it into a 10-inch circle and then transfer it to a baking sheet lined with parchment paper.
