2 tablespoons lemon rind ( grated )
1 teaspoon vanilla

Surmælksfrugtbrød, also known as Danish sour-cream fruit bread, is a beloved bread in Denmark. The bread is a perfect companion with hot or cold beverages and can be served with breakfast, tea parties, or as a sweet snack! This recipe is made with the combination of sour cream, almonds, and chopped dried fruits, which gives it a tangy and sweet flavor, making it an indulgent, yet nutrient-rich treat.

Instructions

1.Preheat your oven to 350°F (180°C) degrees. Grease and flour two 9-inch loaf pans.
2.In a large bowl, whisk together the sugar, white flour, whole wheat flour, baking soda, baking powder, salt, chopped apricots, prunes, and chopped almonds.
3.In a separate bowl, whisk together beaten egg, melted butter, sour cream, grated lemon zest, and vanilla extract. Add the egg mixture to the flour mixture, and stir until just combined.
4.Divide the batter between the prepared loaf pans evenly.
5.Bake for 40-50 minutes or until the toothpick that is inserted into the center of the bread comes out clean. Let it cool for 10 minutes before transferring to a wire rack to cool completely.
6.Sprinkle with powdered sugar and candied fruit before serving if desired.
