3/4 teaspoon bicarbonate of soda
8 ounces soft brown sugar

2 ounces pecan nuts , roughly chopped

Instructions

1.Preheat the oven to 350°F and grease a 9-inch square baking dish
2.In a mixing bowl, cream the butter and brown sugar until light and fluffy
3.Beat in the eggs one at a time, mixing well after each addition
4.Sift in the flour
5.Stir in the chopped dates and boiling water
6.Dissolve the coffee granules in the hot water and add in the vanilla essence and bicarbonate of soda
7.Add the coffee mixture to the pudding batter, mix well
