2 cups heavy cream
5 eggs
6 tablespoons sugar
3/4 cup flour ( sifted )
1/2 teaspoon cardamom
Danish cuisine is full of sweet and savory treats and these Small Cream Cakes are no exception. Also known as 'Små Flødekager', they are a popular dessert in Denmark. These cakes are light and fluffy with a hint of cardamom, making them the perfect ending to any meal.

Instructions

1.Preheat the oven to 375°F (190°C).
2.In a bowl, whisk together 1 1/2 cups of heavy cream, 4 egg yolks, and sugar until light and fluffy.
3.Sift in flour and cardamom and mix.
4.In another bowl, beat the egg whites until stiff peaks form then gently fold into the cream mixture.
5.Fill a muffin tin with the mixture and bake for 20-25 minutes.
6.Once baked, allow to cool before topping with the remaining heavy cream and serve.
