1 -2 drop green food coloring ( optional )
1/2 cup seedless raspberry jam
5 ounces semi-sweet chocolate baking squares , melted
Japanese Shortbread takes traditional shortbread to a whole new level with the addition of green coloring and flavors inspired by Japanese cuisine. The almond and pistachio filling pairs perfectly with the buttery crust, and a drizzle of melted chocolate adds the perfect finishing touch. Although it may not be the healthiest option, this dessert is definitely a crowd-pleaser and is perfect for special occasions.

Instructions

1.Preheat oven to 350°F
2.In a large bowl, combine 2 1/2 cups flour and 3/4 cup sugar. Cut in 1 cup cold butter until mixture resembles coarse crumbs.
3.Stir in 1 beaten egg until mixture forms a dough.
4.Press dough into bottom of 9x13 inch baking pan. Bake for 10-12 minutes or until lightly browned.
5.Meanwhile, in a large bowl, combine 1 cup almonds, 1 1/4 cups sugar, 1/2 cup chopped pistachios, and 1/4 cup flour.
6.Beat in 1/2 cup softened butter, 2 eggs, 1 1/2 tsp almond extract, 1 tsp vanilla extract, and 1-2 drops green food coloring.
7.Spread 1/2 cup raspberry jam over baked crust. Pour almond mixture over jam.
8.Bake for 25-30 minutes or until golden brown. Cool on a wire rack.
9.Drizzle melted chocolate over the top. Chill until set. Cut into bars and serve.
