Instructions

1.Preheat the oven to 350°F.
2.Spread hazelnuts onto a baking sheet and roast for about 10 minutes or until golden brown. Let cool and coarsely chop them.
3.In a bowl, whisk flour, baking powder and salt.
4.Using an electric mixer, beat butter and sugar until fluffy.
5.Beat in the egg and vanilla extract.
6.Add the flour mixture to the butter mixture gradually and beat until just combined.
7.Stir in the hazelnuts.
8.Roll the dough into logs having 1-inch thickness and wrap them with plastic wrap.
9.Chill the logs in the refrigerator for at least 2 hours or up to 3 days.
10.Preheat oven to 325°F.
11.Unwrap the logs, cut them into 1/3 inch slices and arrange on baking sheets lined with parchment paper. Keep the slices 2 inches apart from each other.
12.Bake for about 18-20 minutes until the edges are golden brown in color.
13.Melt chocolate over a double boiler.
14.Dip the edges of cooled shortbread cookies into melted chocolate and let them cool on a baking sheet until the chocolate is set.
