8 ounces plain flour
4 ounces butter , chilled and cut into small pieces
1 -2 tablespoon cold water
flour , for dusting
lemon curd or black currant jam
caster sugar , for sprinkling

Instructions

1.Preheat oven to 200°C/180°C fan/gas mark 6.
2.In a large bowl, mix together flour and butter using your fingers until it resembles breadcrumbs.
3.Add 1 tablespoon of cold water and knead until it forms a dough.
4.Roll out the dough onto a floured surface and cut out 12-16 circles using a cookie cutter.
5.Place the circles into a muffin tin and prick the bottoms with a fork.
6.Place a spoonful of lemon curd or black currant jam into each tart.
7.Sprinkle caster sugar over the top of each tart.
8.Bake for 15-20 minutes until golden brown.
9.Serve warm and enjoy!
