Ingredients

1 1/4 cups all-purpose flour
1/2 cup powdered sugar
2 teaspoons instant coffee granules
2/3 cup butter or 2/3 cup margarine , softened
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract ( optional )
12 ounces semisweet chocolate morsels , divided
The Mocha Shortbread has a rich, buttery shortbread base, infused with a deep coffee flavour from the instant coffee granules, and generously coated in smooth, gooey chocolate.

Instructions

1.Preheat the oven to 375°F.
2.In a mixing bowl, combine the flour, powdered sugar, and instant coffee granules.
3.Add in softened butter or margarine, vanilla and almond extract and beat until smooth.
4.Divide the dough in half and shape each half into a log.
5.Place the logs onto a parchment-lined baking sheet and bake for 18 to 20 minutes, or until the edges are lightly browned.
6.Once baked, allow the logs to cool for several minutes before slicing them into rounds.
7.In a microwave-safe bowl, melt 1 cup of chocolate morsels and stir until smooth.
8.Dip each shortbread round into the melted chocolate and set on parchment paper.
9.Repeat with the remaining chocolate chips. Place the baking sheet into the refrigerator to chill for 15 to 20 minutes, or until the chocolate is firm.
10.Serve and enjoy!
