Ingredients

1 lb butter
2 cups sugar ( castor sugar )
3 cups rice flour
3 cups flour ( the combination of the flours should make 6 cups )
Glasgow shortbread is a traditional Scottish cookie typically served during tea time. This recipe makes classic shortbread, rich in buttery flavor and crumbly texture. Instructions

1.Preheat oven to 300°F.
2.Cream butter with sugar until light and fluffy.
3.Sift flour and rice flour together, and stir into the butter mixture.
4.Knead the dough gently until smooth.
5.Press out dough onto a floured surface until 3/4 inch thick.
6.Cut dough into shapes with a cookie cutter.
7.Transfer to baking sheet and prick all over with a fork.
8.Bake for 25-30 minutes until light golden in colour.
9.Sprinkle with sugar while still hot, if desired.
