125 g plain flour
125 g self raising flour
125 g butter
60 g caster sugar

Instructions

1.Preheat the oven to 170°C (325°F) Gas Mark 4
2.In a large bowl, mix together the plain flour, self-raising flour and caster sugar.
3.Add the butter and mix until the dough comes together.
4.Press the dough into a lined baking tray.
5.Prick all over with a fork, then chill in the fridge for 20 minutes.
6.Bake in the oven for 20-25 minutes, or until lightly golden.
