Ingredients

230 g ready-made rolled shortcrust pastry
3 -4 boiled potatoes , sliced into 1-inch rounds
4 slices Stilton cheese
salt
fresh ground black pepper
1 egg , beaten with a little
milk
English Stilton and Twice Baked Potato Picnic Pies - Pasties are a classic British pastry dish that are perfect for a picnic or packed lunch. This dish combines the creamy flavour of Stilton cheese with the hearty texture of boiled potatoes, encased in golden, flaky shortcrust pastry. The combination of flavours and textures in this dish make it a must-try for anyone who enjoys savoury baked goods. Instructions

1.Preheat the oven to 180 C / Gas 4.
2.Roll out the shortcrust pastry onto a lightly floured surface. Cut out four circles of pastry using a pastry cutter, then place them onto a baking sheet.
3.Layer 3 - 4 rounds of boiled potatoes in each pastry circle. Add a slice of Stilton cheese to each pie and season with salt and black pepper.
4.Fold pastry top over and press firmly together. Brush beaten egg and milk mixture over the top of each pastry and cut a small hole in the top.
5.Bake for 25 - 30 minutes or until the pastry is golden in colour. Serve slightly warm or at room temperature on a picnic!
