Ingredients

1 lb piece lamb
1 cup pearl barley ( soaked overnight if possible )
3 large carrots
2 medium onions
1 large leek
1 small turnips or 1 small swede
1/2 bunch fresh curly-leaf parsley ( chopped )
1 teaspoon salt
1/4 teaspoon white pepper
1 teaspoon ground coriander ( Cilantro )
1 clove
1 bay leaf
3 liters cold water or 6 pints cold water
Traditional Scotch Broth is a flavorful and hearty soup that originates from Scotland. It is made with lamb, pearl barley, and a variety of vegetables including carrots, onions, leeks, and turnips/swede. The soup is often enjoyed during cold winter months as a warming comfort food. The ingredients are simple and rustic, reflecting Scotland’s agricultural heritage. This version of Scotch broth is easy to make and produces a delicious and satisfying meal.

Instructions

1.Rinse the lamb and put it into a large pot filled with cold water. Bring to a boil then let it simmer for 30 minutes.
2.Skim the foam from the top of the pot and add the pearl barley.
3.Peel and chop the carrots, onions, and turnips/swede and add them to the pot.
4.Add the chopped parsley, salt, white pepper, ground coriander, clove, and bay leaf.
5.Cover and let it simmer on low heat for 2 hours.
6.Remove the lamb from the pot and shred the meat off the bone. Discard the bone and fat, then add the meat back to the pot.
7.Adjust seasoning to taste and serve hot.
