Ingredients

3 lbs potatoes ( Tatties )
1 large onion ( sliced )
1 can corned beef
4 tablespoons fat ( lard it best , but you can use vegetable shortening , oil etc )
1 pinch salt and pepper

Instructions

1.Peel and slice the potatoes.
2.In a large pot, sauté the sliced onions in the fat until softened.
3.Add the sliced potatoes to the pot and coat them with the onions and fat.
4.Pour in enough water to cover the potatoes and bring to a simmer.
5.Crumble in the corned beef and mix well.
6.Season with salt and pepper to taste.
7.Cover the pot and simmer for 1-2 hours, or until the potatoes are soft and the mixture is thick and creamy.
