2 cooking apples , peeled , cored & grated
150 g onions , peeled & finely chopped
150 g golden sultana raisins
4 oranges , juice and zest of
300 g light brown sugar
1 teaspoon ground cinnamon
1 teaspoon freshly ground nutmeg
1 teaspoon cayenne pepper
3 pinches saffron strands
2 teaspoons salt
50 g fresh gingerroot , grated
300 ml white wine or 300 ml cider vinegar
750 g pears , peeled , cored and roughly chopped
350 g tomatoes , roughly chopped

Instructions

1.In a large pot, combine the grated apples, chopped onions, sultana raisins, orange juice and zest, brown sugar, ground cinnamon, nutmeg, cayenne pepper, saffron strands, salt, grated gingerroot, and white wine or cider vinegar.
2.Bring to a boil, then reduce heat to a simmer and cook uncovered for 20 minutes, stirring occasionally.
3.Add the chopped pears and tomatoes to the pot and continue to simmer for another 40 minutes until the chutney thickens and the fruit is tender.
4.Remove from heat and let cool completely before transferring to sterilized jars.
5.Enjoy as a condiment or pairing with your favorite cheese or crackers.
