2 lbs old potatoes , peeled and cut into chunky sticks
oil ( for frying )

Instructions

1.Preheat the oil in a deep fryer or large pot to 325°F (165°C).
2.Rinse the potato sticks in water to remove excess starch and pat dry with paper towels.
3.Fry the potato sticks in batches for 3-5 minutes or until they are pale and starting to soften.
4.Remove from oil and let cool at room temperature for at least 10 minutes. Increase the heat to 375°F (190°C).
5.Return the chips to the hot oil and fry for another 3-5 minutes or until golden and crispy.
6.Use a slotted spoon to remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.
7.Sprinkle with salt and vinegar to taste and serve hot.
