Ingredients

3/4 teaspoon active dry yeast
2 2/3 cups bread flour
3/4 cup rye flour
3/4 teaspoon salt
3 tablespoons molasses
3/4 cup water
1/3 cup beer
Danish Beer Bread (Ollebrod) Abm is a traditional Danish bread that is typically made using stale beer. Using beer in bread may seem unusual but it gives the bread a unique flavor. This bread is also made with rye flour which lends an earthy and nutty flavor to the bread. The use of molasses adds a subtle sweetness to the bread. Overall, this bread is tasty and perfect for breakfast or as a sandwich bread.

Instructions

1.Add all dry ingredients (yeast, bread flour, rye flour, and salt) to the bread machine
2.Pour molasses, water, and beer into the bread machine
3.Select the 'Dough' setting and start the machine
4.Once the dough is done, remove it from the machine and shape into a round loaf
5.Place the loaf into a greased baking dish, cover, and let rise for 1 hour
6.Preheat the oven to 375°F and bake for 45 minutes
7.Remove from the oven and let cool before slicing.

PROS

Easy to make using a bread machine.
Has a unique flavor due to the use of beer and rye flour.
Keeps well for several days.

CONS

May not rise as high as other breads.
The flavor may not be to everyone’s taste.

HEALTH & BENEFITS

Rye flour contains more fiber and nutrients than regular wheat flour. Molasses adds iron and other minerals to the bread. However, this bread should still be consumed in moderation due to its high carbohydrate content.
