Ingredients

2 pork tenderloin
1 large apple ( peeled and diced )
3/4 cup prune ( pitted and diced )
5 slices bacon ( uncooked , cut in small pieces )
salt
pepper
1/2 cup margarine
2 cups water
1 cup creme fraiche
1/2 cup red currant jelly
1/2 cup Roquefort cheese , crumbled
This Danish Pork Tenderloin with Roquefort Gravy is a delicious and elegant main course that is perfect for special occasions or a fancy dinner party. Instructions

1.Preheat oven to 375ºF.
2.Season pork tenderloins with salt and pepper.
3.In a skillet, cook bacon over medium heat until crisp, remove from skillet and set aside.
4.In the same skillet, add margarine and brown the pork tenderloins on all sides.
5.Remove pork from skillet and place in a baking dish.
6.In the same skillet, add diced apple and cook until lightly browned.
7.Add diced prune and cook for 2-3 minutes.
8.Spread the apple and prune mixture over the pork tenderloins in the baking dish.
9.Add water into the skillet and simmer until reduced by half.
10.Add creme fraiche, red currant jelly, and Roquefort cheese into the skillet and stir until cheese is melted and sauce is smooth.
11.Pour the sauce over the pork tenderloins.
12.Bake pork tenderloins in the preheated oven for 25-30 minutes or until the internal temperature reaches 145ºF.
13.Remove from oven, let rest for 5 minutes, and serve with the Roquefort gravy on top.
