Ingredients

1 1/2 lbs tart cherries , divided
3 quarts water
1 cinnamon stick
1/2 lemon , sliced
2 tablespoons cornstarch
1/2 cup sugar
Kirsebærsuppe, or Danish Cherry Soup, is a traditional Scandinavian dessert soup. Made with tart cherries, this soup offers a sweet and tangy taste that is perfect for summer. Instructions

1.Mix 1 pound of cherries, water, cinnamon stick, and lemon slices in a pot and bring to boil.
2.Simmer for 30 minutes.
3.Remove from heat and strain mixture.
4.Mix cornstarch with 1/4 cup water and add to mixture.
5.Add remaining cherries and sugar.
6.Return to low heat and simmer for an additional 10 minutes.
7.Remove from heat, cool, and chill for 2 hours before serving.
