Ingredients

1 tablespoon canola oil
1 onion
2 medium beetroots
1 carrot
2 potatoes
1/4 cabbage
1 red pepper
1 tablespoon chicken stock powder
1/2 cup vinegar
1 tablespoon sugar
5 peppercorns
1/4 cup low-fat plain yogurt
1/2 cup parsley ( chopped )
dried dill ( to garnish )

Instructions

1.In a pot, heat the canola oil over medium-high heat.
2.Add the chopped onion and sauté until translucent.
3.Add chopped beets, carrot, potatoes, and red pepper and stir well.
4.Pour in the chicken stock powder, vinegar, sugar, and peppercorns. Add enough water to cover the vegetables and bring to a boil.
5.Lower the heat to medium-low, cover, and simmer until the veggies are tender, about 30-40 minutes.
6.Take off the heat and stir in chopped parsley and a dollop of low-fat plain yogurt.
