Ingredients

1 envelope yeast
1/2 cup room temperature milk
2 tablespoons granulated sugar
1 large egg ( or 2 small )
125 g margarine
250 -300 g flour
100 g sugar
100 g butter , unsalted
1 -2 teaspoon cinnamon
1/8 cup raisins
1/8 cup candied lemon and orange dried fruit , chopped
cold coffee or egg
2 tablespoons coarse sugar
1/8 cup blanched slivered almond
The Danish Easter Cake is a traditional pastry that is typically enjoyed in Denmark during the Easter holidays. The cake consists of a sweet yeast dough that is filled with a mixture of sugar, cinnamon, raisins, candied fruit, and slivered almonds. The dough is then covered with another layer of dough and baked until golden brown. The resulting cake is moist, fragrant, and delicious. It is typically served as a dessert or a sweet snack with coffee or tea.

Instructions

1.In a large mixing bowl, dissolve the yeast in the milk with 2 tablespoons of sugar.
2.Beat the egg in another bowl and mix it with the yeast mixture.
3.Add the margarine and flour and mix until a smooth dough forms.
4.Cover the bowl and let the dough rise for 1 hour.
5.In a separate mixing bowl, mix 100g sugar, 100g unsalted butter, cinnamon, raisins, candied fruit, and slivered almonds.
6.Preheat the oven to 200°C and butter a deep pie dish.
7.Roll out 2/3 of the dough and use it to cover the bottom of the dish.
8.Spread the filling on top of the dough.
9.Roll out the remaining dough and cut out a circle big enough to cover the filling.
10.Place the dough circle on top of the filling and pinch the edges closed.
11.Use a sharp knife to make a cross-shaped slit in the center of the dough.
12.Brush the dough with coffee or egg and sprinkle with coarse sugar.
13.Bake in the oven for 30-40 minutes.
14.Cool the cake for 10 minutes before serving.

PROS

Great for springtime celebrations and Easter gatherings.
The combination of raisins, candied fruit and cinnamon gives the cake a delicious flavor and aroma.
Can be enjoyed warm or cold.

CONS

The recipe requires some time and effort to prepare, as the dough needs to be left to rise for an hour.
There are quite a few steps involved in assembling the cake.
