10 slices bacon , cut into 1 inch pieces
5 onions , thinly sliced
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup milk
1/2 cup heavy cream
1 tablespoon all-purpose flour
4 eggs
1 pinch ground nutmeg
1 unbaked pie crust

Instructions

1.Preheat your oven to 375ºF.
2.Cook chopped bacon in a medium skillet over medium heat, stirring occasionally, until crisp, about 8 minutes. Remove the bacon from the skillet and place on a paper towel lined plate.
3.Add sliced onions, salt, and pepper to the same skillet and stir. Cook until caramelized, stirring occasionally, about 20 minutes.
4.While the onions are cooking: In a separate bowl, whisk together milk, heavy cream, flour, eggs, nutmeg, salt and pepper until fully combined.
5.Once the onions are caramelized, add in the cooked bacon and stir.
6.Pour the onion and bacon mixture into the bottom of an unbaked pie crust.
7.Pour the custard mixture over the top.
8.Bake at 375ºF for 35-45 minutes or until the filling is set.
9.Let cool for 10 minutes before slicing and serving.
